It measures 800 by 800 by 900 millimetres, giving a square top sized for the oven itself, with two mesh shelves below for peels and tools. At 900 millimetres high it places the oven mouth at a comfortable working height, so the cook can see into the chamber without stooping. The table is fitted with wheels, so the oven and the workstation can be repositioned together. It is designed to take the weight and the radiated heat of a pizza oven, which ordinary outdoor furniture is not. The Witt wooden pizza peel is made from rubberwood and is available in 12 inch and 14 inch sizes. Wooden peels are used for launching pizzas because raw dough releases from timber far more cleanly than it does from metal, which reduces the risk of a base sticking and folding on the way into the oven. The 12 inch peel handles pizzas up to 30 centimetres and suits the Witt Piccolo Rotante 13 inch. The 14 inch peel suits larger bases going into the Etna Rotante 16 inch or the Piccolo Rotante 16 inch. Rubberwood is a durable, sustainably harvested hardwood. The peel should be wiped clean rather than soaked. It must not go through a dishwasher, as saturated timber will warp.

The Witt infrared temperature gun measures surface temperature from 50 to 800 degrees Celsius and includes a laser pointer for accurate aim. It is used to read the actual temperature of a pizza stone before launching a pizza, which matters because a pizza oven's built-in gauge reads the air temperature inside the chamber rather than the surface the base cooks on. Those two figures differ, particularly in the minutes after a pizza has been launched and the stone has given up heat. Most cooks aim for a stone temperature between 430 and 480 degrees Celsius for Neapolitan-style pizza, with lower temperatures for Roman or New York styles that need longer, gentler baking. The gun is also useful for checking barbecue plates, griddles and cast iron cookware.

These Witt cast iron pans are made for cooking in a pizza oven, where temperatures reach 500 degrees Celsius and lighter cookware will not survive. Four options are available: a two-sided roasting and cooking pan with a roasting face on one side and a flat cooking surface on the other, an oval cooking pan, an oval roasting pan, and a round cooking pan. Cast iron holds and distributes heat evenly, which suits the intense radiant environment of a wood or gas pizza oven. The pans sit directly on the pizza stone and are used for vegetables, seafood, joints of meat and anything that would otherwise fall through a grill. They are ordinary cast iron and can equally be used in a domestic oven, on a hob or on a barbecue. Care is standard for cast iron: keep lightly oiled, dry thoroughly, and avoid prolonged soaking.
