The 12 inch peel handles pizzas up to 30 centimetres and suits the Witt Piccolo Rotante 13 inch. The 14 inch peel suits larger bases going into the Etna Rotante 16 inch or the Piccolo Rotante 16 inch. Rubberwood is a durable, sustainably harvested hardwood. The peel should be wiped clean rather than soaked. It must not go through a dishwasher, as saturated timber will warp.

The Witt infrared temperature gun measures surface temperature from 50 to 800 degrees Celsius and includes a laser pointer for accurate aim. It is used to read the actual temperature of a pizza stone before launching a pizza, which matters because a pizza oven's built-in gauge reads the air temperature inside the chamber rather than the surface the base cooks on. Those two figures differ, particularly in the minutes after a pizza has been launched and the stone has given up heat. Most cooks aim for a stone temperature between 430 and 480 degrees Celsius for Neapolitan-style pizza, with lower temperatures for Roman or New York styles that need longer, gentler baking. Witt Etna Rotante Spare Pizza Stone

These are genuine Witt replacement pizza stones for the Etna Rotante 16 inch oven. The Etna uses two stones: a round rotating stone measuring 40 by 40 by 1.5 centimetres and weighing 3.1 kilograms, which is the surface the pizza cooks on and which turns during use, and a front stone measuring 56 by 25 by 7.5 centimetres and weighing 1.4 kilograms, which sits at the mouth of the oven. Pizza stones commonly crack through thermal shock, when cold dough, oil or water contacts a stone that has been heated to 500 degrees Celsius. This is normal wear rather than a fault. Keeping a spare stone means a crack does not take the oven out of service. These stones are cut for the Etna Rotante 16 inch and do not fit the Piccolo models.

These Witt cast iron pans are made for cooking in a pizza oven, where temperatures reach 500 degrees Celsius and lighter cookware will not survive. Four options are available: a two-sided roasting and cooking pan with a roasting face on one side and a flat cooking surface on the other, an oval cooking pan, an oval roasting pan, and a round cooking pan. Cast iron holds and distributes heat evenly, which suits the intense radiant environment of a wood or gas pizza oven. The pans sit directly on the pizza stone and are used for vegetables, seafood, joints of meat and anything that would otherwise fall through a grill. They are ordinary cast iron and can equally be used in a domestic oven, on a hob or on a barbecue. Care is standard for cast iron: keep lightly oiled, dry thoroughly, and avoid prolonged soaking.
