The owner's insights on the Giotto

The Giotto is the compact end of the Polito range: pre-assembled, lightweight for a wood-fired oven at 168kg, and the fastest to heat of everything Polito builds. Floor temperature climbs to 380-440°C and the dome to 460-520°C in about 20 to 30 minutes, so a weeknight pizza night doesn't need an hour of standing around waiting on the fire.

Every Giotto is handmade at Polito's Thomastown workshop in Melbourne, NATA tested and certified, then finished in Stove Bright paint that's colour-stable to 650°C. The refractory dome and 780mm internal floor take two large pizzas at once and comfortably feed anywhere from a couple to a table of twenty. Pick from four stand configurations depending on the bench or base you're working with, and five colours if the finish matters to you as much as the cooking.

If you're regularly feeding a bigger crowd off three pizzas at a time, or want the largest cooking floor in the range, the Donatello II is the better fit; it's a heavier, more permanent installation built for that volume. The Giotto is the one to choose when portability, a smaller footprint or a faster heat-up matters more.

It ships pre-assembled on a pallet, generally 200-232kg once packed, and needs four people to lift into place. It's approved for both indoor and outdoor use, though an indoor install needs the right flue kit for your ceiling or roofline.

A flue kit for running the flue through a roof or ceiling is priced separately depending on your clearance to combustible material, roughly $152 to $1,333. Tell us what your roofline looks like and we'll confirm the right kit with a certified mechanical plumber before you order.

Fitting the Giotto in

Whatever bench or base you place it on needs to support 170kg. The minimum bench size is 850 x 850mm. For the BTS stand configuration, allow 750mm of bench depth and a bench height of 900-1000mm; for the Feet configuration, the bench needs to be at least 1100mm high. Stone benchtops need the BTS stand for thermal protection; on a concrete bench without the BTS stand, leave a minimum 20mm clearance on packers. Don't place the oven directly on a combustible surface, and allow at least 100mm clearance on the back and sides.

Running the flue through a roof or ceiling depends on clearance to combustible material: a triple-skin flue kit needs 25mm clearance, while a double-skin twist-lock kit needs 600mm clear of timber. Both installs need a certified mechanical plumber, not a DIY fit.

Can the oven be used indoors?

Yes, the Giotto is approved for indoor and outdoor use. Indoor installations need a flue kit matched to your ceiling and roofline, fitted by a certified mechanical plumber. Call us to talk through your setup and the right kit for it.

Does it arrive pre-assembled? How does delivery work?

Yes, it arrives fully assembled on a pallet, generally 200-232kg once packed. Pickup is available from Thomastown, Victoria, or we can arrange delivery Australia-wide to a depot or directly to your property. You'll need four people to carry and position the oven.

Do I need the BTS Stand if I'm placing it on a bench?

Whatever bench you use needs to support 170kg, at least 850 x 850mm. The BTS stand gives thermal protection from the bench and extra cooking height, and it's required for stone benchtops. On a concrete bench without it, leave a minimum 20mm clearance on packers, and never place the oven directly on a combustible surface.

Is the exterior safe to touch during use?

No, the Giotto's exterior gets hot during operation. Don't touch the outside of the oven while it's running, and allow a minimum 100mm clearance on the back and sides when placing it on a bench.

How do I clean the oven?

Wipe the exterior down with running water and a clean cloth once it's cold. Inside, just sweep out the cooled ash; no cleaning products needed. Never use a high-pressure cleaner on any part of the oven, as it can cause the paint to peel.

What warranty is included?

Polito provides a five-year structural integrity warranty, covering that the oven won't collapse or cave in under normal use, subject to correct installation and operation per the supplied instructions.
