Why You'll Love This
Polito Refractory Efficiency
A Polito heats fast because it is engineered for refractory efficiency, so dinner does not wait. The Donatello II reaches 300 degrees in 60 to 90 minutes, then holds heat across pizza, bread and slow-cooked sessions.
Handcrafted in Melbourne
Every Donatello II is built by hand at Polito's facility in Thomastown, Victoria, using Australian refractory clay. Quality mass-produced imports cannot match the precision of this construction.
960mm Cooking Floor, Three Pizzas at Once
The 960mm internal cooking floor fits three large pizzas at a time. Modern insulating construction keeps the weight lower than a traditional full-masonry oven.
Efficient Low-Consumption Firing
A ceramic fibre blanket and insulating masonry hold heat effectively. Once at temperature, only one log at a time is needed, typically 5 to 10kg of firewood per session.
Weatherproof Year-Round
Fully waterproof and suited to permanent outdoor placement. The membrane-painted exterior is repaintable using Acratex Dulux; touch-up paint is included with every oven.
Features
Pre-Cast Refractory Dome
Formed from Polito's pre-cast refractory mix using Australian refractory clay. The 50mm cooking floor contains over 38% alumina for a stable, high-performance baking surface.
Multi-Layer Thermal Insulation
A steel base with thermal fill sits beneath a ceramic fibre blanket and outer insulating masonry. This keeps the rendered exterior cool to the touch during operation.
Optional Temperature Gauge
An Italian analogue temperature gauge is available as an optional extra, giving a visible read of the internal oven temperature without opening the door.
Arch, Door, Flue and Cowl Included
Ships complete with a metal arch, metal door, 200mm stainless steel flue, and aluminium cowl. The 600mm-wide front opening is framed by the metal arch.
Indoor and Outdoor Approved
Approved for both indoor and outdoor installation. A custom flue kit is required for indoor use; contact My Acre to arrange this at an additional cost.
Three Mounting Options
Choose metal feet for bench mounting, a flat-pack tower stand (920mm W x 920mm L x 1,010mm H), or a round stand (1,035mm W x 835mm L x 850mm H). Castor wheels can be added to the tower stand for outdoor mobility.
Rough Cast Texture, Repaintable Finish
Hand-crafted rough cast texture sealed in White or Black membrane paint. Can be repainted using Acratex Dulux; touch-up paint is included with every oven.

Frequently Asked Questions
What is the Donatello II wood fire oven?
The Donatello II is a handmade wood fire oven built in Melbourne by Polito. It features a 960mm cooking floor, weighs approximately 500kg, and is built from modern refractory and insulating materials for high efficiency. Suitable for both outdoor and indoor use.
Can this oven be used indoors?
Yes. The Donatello II is approved for both indoor and outdoor installation. For indoor use, a custom flue kit is required to manage smoke extraction; contact My Acre to discuss options and costs.
Does it arrive pre-assembled? How is delivery handled?
The oven arrives fully pre-assembled on a pallet (1,450mm x 1,450mm x 1,200mm). Delivery can be arranged Australia-wide to a depot or direct to your property; contact My Acre to discuss delivery options and costs for your location.
How long does it take to reach cooking temperature?
Allow 60 to 90 minutes to reach 300 degrees once cured. One log at a time is typically enough to maintain heat. Cooking temperatures vary: 200 degrees for meats and bread, 300 degrees for pizza and stews, 400 degrees for Neapolitan-style pizzas.
Is the exterior safe to touch while in use?
Yes, the rendered and painted exterior remains cool to the touch during operation. The metal arch, door and flue become hot. The oven's insulation concentrates heat internally, making clearance requirements less restrictive than a traditional brick oven.
What warranty is included?
Polito offers a five-year structural integrity warranty, covering that the oven will not collapse or cave in. Warranty applies subject to correct installation and start-up per the operating instructions.
How do I clean the oven?
Sweep the cooled interior with a light bristle broom; no cleaning products required inside. Wash the exterior with running water and a broom. Do not use high-pressure cleaning on any part of the oven.
