The Donatello II is the largest wood-fired oven Polito builds, and it's the one we point people to when they're serious about cooking for a crowd. The 960mm internal cooking floor takes three large pizzas at once, and it holds that heat through a long night of pizza, bread and slow-cooked dishes rather than cooling between rounds.

Every Donatello II is handcrafted at Polito's Thomastown workshop in Melbourne from Australian refractory clay. A steel base with thermal fill, a ceramic fibre blanket and an outer layer of insulating masonry keep the rendered exterior cool to the touch while the dome does the work inside, and the whole thing comes finished in a repaintable White or Black membrane paint with touch-up paint included.

If you're after something lighter, more portable or faster to heat, the Giotto is the better fit; at 168kg it's a fraction of the Donatello II's roughly 500kg and reaches temperature in 20 to 30 minutes rather than 60 to 90. The Donatello II is the one to choose when you're cooking in volume and have the space and bench for something built to stay put.

It arrives fully pre-assembled on a pallet measuring 1,450mm x 1,450mm x 1,200mm. It's approved for both outdoor and indoor use, though indoor installs need a custom flue kit to manage smoke extraction, and every oven is made to order, handmade in Melbourne.
