A gas pizza oven reaches temperature in about twenty minutes with no fire to light, feed or clean up after. That is the whole argument; for most households it is the one that wins: pizza on a Tuesday rather than only on a Saturday when someone has the afternoon to manage a fire.

It is also the only oven you can use on a total fire ban day, which in an Australian summer is a meaningful number of the evenings you would most want to be outside.

How to choose

Countertop or built in. A Witt sits on a bench or its own stand and can move house with you. A Valoriani kit is rendered into masonry and is permanent. Decide this before anything else, because it rules out half the range either way.

Then size it to the table. A 13 inch oven cooks one pizza at a time, which suits two to four people eating in sequence. A 16 inch keeps up with a table of six or more without anyone waiting long between rounds.

Then check the gas. Bottled LPG connects like a barbecue. Natural gas needs a licensed fitter; a burner kit going into a masonry oven needs a specialist. Ask us before ordering if you are not sure which one you are dealing with.

Gas pizza oven questions, answered

Can you use a gas pizza oven during a total fire ban?

Generally yes. A gas oven has no solid fuel and no embers, so it is treated like a barbecue rather than a fire. Rules differ by state and a total fire ban can still restrict outdoor cooking, so check your local fire authority on the day.

How long does a gas pizza oven take to heat up?

Around twenty minutes to reach pizza temperature, against forty five minutes to an hour for wood. That difference is what decides it for most people cooking on a weeknight.

Does a gas oven make worse pizza than wood?

Not at these temperatures. What wood adds is a faint smoke note and the fire itself as part of the evening. If the smell of woodsmoke is the point for you, buy wood; if getting a good pizza on the table quickly is the point, buy gas.

What is a rotating stone?

The Witt Rotante ovens turn the cooking stone slowly under the flame, so the base cooks evenly without you reaching in to spin the pizza. It removes the one skill that takes practice in a small oven.

Do I need a gas fitter?

Bottled LPG models connect like a barbecue. Anything plumbed to natural gas needs a licensed gas fitter; a Valoriani gas burner kit fitted into a masonry oven needs a specialist. Ask us before you order if you are unsure which applies.

Can a gas pizza oven be built into an outdoor kitchen?

The Valoriani kits are made for it, since the oven is designed to be rendered or clad into a bench. The Witt ovens are countertop units, so they sit on a bench or a stand rather than inside one.
