The owner's insights on the Giotto Gas

The Giotto Gas is Polito's gas version of the oven they build by hand in Thomastown. It is the Giotto body you already know: the same refractory chamber, the same 200mm flue on top. In place of the fire you build yourself there is a burner in the middle of the cooking floor, a control knob with a piezo igniter on the side of the body, then a dial thermometer set into the face so you can read the chamber without reaching for a laser gun.

The honest trade is this. Wood puts smoke into the food; gas does not. What gas gives you back is the weeknight. If you have looked at a wood oven on a Wednesday, worked out it needs a fire plus twenty minutes, then cooked inside instead, this is the version that actually gets used.

One thing to plan for: the Giotto Gas sits on a bench or base you provide. There is no full stand on this model, so work out where it is going before you order.

This model is new for Polito, so we would rather tell you what we know than fill the gaps with guesses. We hold the price. On your order we go back to Polito for the burner rating, whether it comes set for LPG or natural gas, and what your fitter needs on the day. That conversation happens before you pay, not after.

Why you'll love the Giotto Gas

It starts with a knob and a button

Turn the control knob, press the red igniter, the burner lights inside the chamber. No kindling, no firelighters, no waiting on coals to settle.

A temperature you can read

A dial thermometer is set into the face beside the mouth, so the chamber temperature sits in front of you the whole time you are cooking.

The Giotto body, unchanged

Polito build it on the oven they already make by hand, so you keep the refractory chamber, the 200mm flue and the high-temperature finish.

Nothing to clean out

No ash. When you are finished you turn the gas off, let it cool, then wipe the outside down with a cloth.

Put plainly: buy the wood Giotto if the fire is part of the enjoyment. Buy the Giotto Gas if the oven only earns its place by being easy to start on a weeknight. If you are torn, ring us. We sell both, so we have no reason to push you either way.

Fitting it in

The Giotto Gas is supplied to sit on a bench or base you provide, so that is the first thing to sort out. Whatever it sits on needs to carry the weight of a Giotto, on a footprint of at least 850 x 850mm. Allow at least 100mm clearance at the back and the sides. Never sit it straight onto a combustible surface. A licensed gasfitter makes the final gas connection; that is the law in every state, not a Polito preference. If the oven is going indoors or under a roof, the flue kit is matched to your clearance to combustible material, so tell us what your roofline looks like before you order.

Frequently asked questions

How does the Giotto Gas light?

There is a control knob with a red piezo igniter on the body. You turn the knob, press the igniter, the burner lights in the middle of the cooking floor. No kindling, no firelighters, nothing to build.

Does it run on LPG or natural gas?

Polito set the oven for your supply. Tell us which one your property runs when you order. We confirm it in writing with Polito before anything is built for you.

Who connects it?

A licensed gasfitter. Gas appliances have to be connected by a licensed person in every Australian state, so budget for that alongside the oven. We will tell you exactly what Polito require for your install before you order.

Does it cook like the wood Giotto?

You are cooking on the same refractory floor inside the same chamber, so the heat behaves the way a Polito behaves. What changes is the fuel and the starting. Wood gives you smoke in the food; gas gives you a start time.

Can I burn wood in it as well?

Do not assume it. The burner sits on the cooking floor, so this is one of the things we confirm with Polito for your order before you commit.

How does it get to me?

Pickup is available from Polito in Thomastown, Victoria. We can also arrange delivery to your address, quoted at the time of order. We shepherd the delivery, then check in with you within a week of it landing.

What warranty comes with it?

Polito warrant the oven structurally, as they do across the Giotto range. The term covering the burner is confirmed with them on your order. Whatever it is, you claim it through us. We handle the warranty for you.
