The Baby 75 is built around a 75 × 75 cm cooking floor of cotto clay, fired in the Valoriani family's own furnace at Via Caselli alla Fornace, Reggello. You cook directly on the clay, the way a Neapolitan pizzeria does. The floor stores heat, releases it through the base of the pizza, and gives a crust that no steel deck reproduces.
AGA-Approved Spitfire Gas Burner
The Spitfire residential gas burner is the only burner with AGA certification specifically for Valoriani ovens. It runs on LPG or natural gas, has eight flame settings, and modulates flame intensity automatically when the oven reaches set temperature. From cold to pizza-cooking temperature in approximately 30 minutes, then steady-state without further intervention.
Compact Footprint for a Real Italian Oven
External dimensions are 101 × 100 × 61 cm for the oven body, 220 kg. On the optional Valoriani stand, total height is 164 cm. Compact enough to install in a courtyard or under a covered alfresco, large enough internally for three 30 cm pizzas at a time, or a 4 kg lamb shoulder, or an 8 kg sourdough bake.

Ø 15 cm Stainless Flue with Rain Cap
Ships with a 900 mm length Ø 15 cm stainless steel flue manifold and rain cap, suitable for permanent outdoor installation. Front opening 36 × 21 cm sits at a working height appropriate to the Valoriani stand.
