The Polito Giotto is a compact, pre-assembled wood fire oven built in Melbourne, designed for outdoor entertaining, indoor kitchens and mobile setups. Cooking-ready in about 30 minutes, not the hours older wood fire ovens demand. The Giotto is waterproof, weatherproof and corrosion resistant, built to live outdoors permanently. Stove Bright high-temperature paint is colour-stable up to 650 degrees and rust resistant.

Refractory Dome with Aluminium Cover
Built from high-quality refractory material with an aluminium outer cover. The 80mm refractory floor and 95mm walls retain and radiate heat efficiently throughout cooking.
Crack Resistant and Self-Cleaning
The refractory construction is crack resistant under normal use, covered by a five year structural warranty. The interior is self-cleaning, simply sweep out ashes when cooled. No cleaning products needed.
Four Ways to Stand It
Pick by your bench height. No stand for a bench or base you already have. Screw-in feet for a 1000 to 1100mm bench. Bench stand to raise the oven 225mm on a standard 900mm bench. Or the freestanding Hexa stand, which needs no bench at all.
Stainless Steel Flue Included
Comes with a 200mm diameter external stainless steel flue, which is all you need for an open outdoor setting. Running the flue through a roof or ceiling needs a kit, and which one depends entirely on how close it passes to timber:

How long does it take to reach cooking temperature?
Cooking-ready in about 30 minutes, not the hours older wood fire ovens demand. The refractory dome reaches 300 to 400 degrees in 30 to 45 minutes. At 200 degrees cook meats, fish, vegetables and bread. At 300 degrees cook pizzas, focaccias and slow-cooked dishes. At 400 degrees cook Neapolitan-style pizzas. One log at a time is enough to maintain heat.
Can the oven be used indoors?
Yes, the Giotto is approved for indoor and outdoor use. Indoor installations require a custom flue kit to manage smoke depending on placement. Contact My Acre to discuss options and costs.
Does it arrive pre-assembled? How does delivery work?
Yes, it arrives fully assembled on a 1,200mm cubed pallet. Pickup is available from Thomastown, Victoria or delivery can be arranged Australia-wide to a depot or directly to your property. You will need four people to carry and position the oven.
Do I need the BTS Stand if placing on a bench?
The BTS (Bench Top Stand) provides thermal protection from the bench and additional height for comfortable cooking. It is required for stone benchtops. For concrete benches, a minimum 20mm clearance of packers must be installed if not using the BTS Stand. Do not place directly on combustible surfaces.
Is the exterior safe to touch during use?
No, the Giotto's exterior becomes hot during operation. As a rule, do not touch the outside of the oven while in use. Allow a minimum 100mm clearance on the back and sides when placing on a bench.
How do I clean the oven?
For the exterior, wipe down with running water and a clean cloth when cold. For the interior, sweep out ashes when cooled. No cleaning products needed. Never use high-pressure cleaning on any part of the oven, as this can cause paint peeling.
Is a gas version available?

What warranty is included?
Polito provides a five year structural integrity warranty covering that the oven will not collapse or cave in under normal use, subject to correct installation and operation per the provided instructions.
