Traditional Cotto Clay Cooking Floor
Pizzas cook directly on the Cotto clay surface, the traditional method for an evenly charred base. The clay distributes heat consistently across the cooking floor, no hot spots, no thin patches.

Cotto Clay Cooking Floor
Refractory Cotto clay floor is the traditional choice for wood-fired ovens. Direct flame contact achieves a properly charred crust while the floor itself stores heat through long cooking sessions.
High-Temperature Mortar Throughout
The dome, crown and chamber are bonded with high-temperature refractory mortar. The chamber holds heat efficiently, so each fire fuels a full evening of cooking without re-stoking.
