The reason you'd add this on: the difference between a good pizza and a pale one is stone temperature. You cannot judge 400°C from 480°C by eye. Point this at the stone and it tells you. It reads 50 to 800°C with a laser pointer for aim, which covers a pizza oven comfortably and is useful on a barbecue plate too.

Why do I need one if the oven has a gauge?
A built-in gauge reads air temperature in the chamber. What actually cooks the base is the stone. The two are not the same number, especially just after you have launched a pizza.
What temperature should the stone be?
For Neapolitan-style bases, most cooks aim for somewhere between 430 and 480°C on the stone. Lower for Roman or New York styles, which want longer and gentler heat.
Can I use it for anything else?
Yes. Anything where surface temperature matters, including barbecue plates, griddles and cast iron pans.
